Broken Cuisine: Reimagine Western Cooking With the Art of Tofu

Friday, March 15, 2024 from 6:00–7:30 pm PDT

Sharing From the Heart is a monthly initiative where young people from China and the United States come together around the pressing ecological, cultural, and spiritual issues of our time. Through sharing thoughts, personal stories, and actions in local settings, Chinese and American youth will begin building cross-cultural bonds to support a vision of a new, ecological civilization.

In this dialogue, we will join George Stiffman, known as ‘The Tofu Guy,’ to explore the diverse world of the Chinese legacy Tofus. George, mentored by the legacy tofu master Luo Zhongda, shares insights from his journey, spanning from writing “Broken Cuisine” to hosting dinners for renowned figures like Daniel Wu and Feng Xiaogang. Having lectured at the Culinary Institute of America and the China Vegan Summit, George’s passion for tofu extends beyond borders. George will highlight the possibilities of tofu, a solar panel for everyone’s palate, whether you’re American or Chinese. After all, Tofus makes an excellent bridge across cultures.

SPEAKER: George Stiffman

George Stiffman

George Stiffman spent a year traveling China, studying the legacy of the country’s tofu masters and apprenticing in a fifth-generation factory outside of Guiyang. There, his Master Shifu convinced him of two things: China’s 27+ varieties of tofu were the tastiest plant proteins on the planet, and Americans were missing out.
